Evergreen Rice Recipe: Mix Veg Pulao

INGREDIENTS:
- Daawat Traditional Basmati Rice
- Oil
- Cumin seeds
- Dried red chili
- Onion, chopped
- Garlic, chopped
Vegetables (cubed):
- Carrots
- Potatoes
- Peppers
Additional Vegetables:
- Corn
- Peas
Spices:
- Coriander powder
- Salt
- Chili powder
- Cumin powder
For Garnish:
- Fresh cilantro
- Crispy onions
For Serving:
- Yogurt sauce (on the side)
Cook:
- Grab a pot and heat it on low.
- Chop and prepare the vegetables. Cube the carrots, potatoes, and peppers, and set aside along with the corn and peas.
- Add oil to the pot. Add cumin seeds and dried red chili, then add the chopped onion and garlic.
- Add the vegetables and sauté.
- Add coriander, salt, chili powder, and cumin powder.
- Toast the rice with the masala, then add water and cook until the rice is soft and fluffy.
- Garnish with fresh cilantro and crispy onions.
- Plate and serve with yogurt sauce on the side. Top with additional cilantro and crispy onions.
