Coconut Rice

INGREDIENTS:
- 1 cup Daawat Ultima Basmati Rice
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 - 2 dried red chilies
- 8 - 10 curry leaves
- 2 tbsp peanuts
- 1 green chili, slit
- ½ cup fresh grated coconut
- Salt to taste
- 2 cups water
- Fresh coriander leaves for garnish
Cook:
- Rinse Basmati Rice thoroughly and cook until fluffy and separate. Set aside.
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add dried red chilies, curry leaves and peanuts. Sauté until the peanuts turn golden.
- Add green chili and cook briefly.
- Stir in fresh grated coconut and sauté lightly for 1-2 minutes.
- Add cooked rice and salt. Mix gently until well combined.
- Cook for 2-3 minutes on low heat to allow flavors to blend.
- Garnish with fresh coriander leaves.
- Serve warm, ideally in a coconut shell for an elevated presentation.
