INGREDIENTS:

  • Mutton pieces (with bone)
  • Daawat Ultima Basmati Rice – soaked 30 mins
  • Yogurt (curd)
  • Biryani masala / spices
  • Ginger-garlic paste
  • Green chillies
  • Fresh mint & coriander
  • Onions – sliced & fried
  • Ghee / oil
  • Salt to taste
  • Whole spices (bay leaf, cardamom, cloves, cinnamon)

Cook:

  1. Marinate Mutton: Mix mutton with yogurt, ginger-garlic paste, biryani masala, and salt. Rest for 20–30 min.
  2. Cook Mutton: In a heavy pot, sauté onions, add marinated mutton, cook until tender with green chillies and herbs.
  3. Parboil Rice: Boil Daawat Ultima Basmati Rice with whole spices until 70% done. Drain.
  4. Layering: In the mutton pot, layer rice over the cooked mutton. Sprinkle fried onions, mint & coriander.
  5. Dum (Steam): Seal the pot and cook on low heat for 15–20 mins until rice is fully done.

Gently fluff and serve hot with raita or salad.
