Mutton Dum Biryani

INGREDIENTS:
- Mutton pieces (with bone)
- Daawat Ultima Basmati Rice – soaked 30 mins
- Yogurt (curd)
- Biryani masala / spices
- Ginger-garlic paste
- Green chillies
- Fresh mint & coriander
- Onions – sliced & fried
- Ghee / oil
- Salt to taste
- Whole spices (bay leaf, cardamom, cloves, cinnamon)
Cook:
- Marinate Mutton: Mix mutton with yogurt, ginger-garlic paste, biryani masala, and salt. Rest for 20–30 min.
- Cook Mutton: In a heavy pot, sauté onions, add marinated mutton, cook until tender with green chillies and herbs.
- Parboil Rice: Boil Daawat Ultima Basmati Rice with whole spices until 70% done. Drain.
- Layering: In the mutton pot, layer rice over the cooked mutton. Sprinkle fried onions, mint & coriander.
- Dum (Steam): Seal the pot and cook on low heat for 15–20 mins until rice is fully done.
Gently fluff and serve hot with raita or salad.
